Easy Fall Recipes
Fall is the perfect season for baking delicious treats and meals but no one wants to be cooped up in the kitchen all day just to make them. Here are a few easy and equally tasty recipes to try this Fall to keep the cooking time to a minimum for more time to enjoy all the fun outdoor activities of the season.
Spaghetti Squash
Spaghetti Squash is the perfect meal for fall and is very easy to make. All you have to do is cut the squash in half, scoop out the seeds, then lather it with olive oil and set it in the oven to cook for about 40 minutes. Once it's cooked use a fork to scrape out the squash then grab a pan and fill it with veggies like zucchini, heirloom tomatoes, and spinach. Add butter and garlic for flavor and season as you like. There are many other variations such as Spaghetti Squash Pad Thai, and Spaghetti Squash Taco Bowl. Ultimately there's no way to go wrong with a Spaghetti Squash dish.

Vegan Creamy Pumpkin Pasta
Tis the season for pumpkin, pumpkin, and more pumpkin, so of course we have to add this delicious 20 minute pasta recipe to our list. Cook the pasta according to package directions then heat Olive Oil in a pan over medium heat to cook the sage leaves then remove them and drain them on paper towels.Add the minced garlic to the pan with Olive Oil and cook until darker and fragrant then add the pumpkin puree and mix them together. Once they're mixed add the coconut cream and bring to a boil, then reduce heat and simmer for a few minutes, stirring occasionally. Lastly, add the cooked pasta to the pan and stir together. Garnish with the sage leaves and voila! You're done.
Ingredients: 1 cup pumpkin puree, 1/2 cup coconut cream (or milk), 5 cloves garlic (minced), 25 sage leaves, 1 tablespoon olive oil, 6 oz gluten free linguine, vegetable broth (optional)

Maple Glazed Chicken with Sweet Potatoes
Sweet potatoes are also a delicious autumn essential so try it with this Maple Glazed Chicken for an easy cook time of 30 minutes. Start off by preparing the sweet potatoes in microwave or from scratch. Then lightly coat chicken with steak seasoning before heating the butter over medium-high heat. Add the chicken and cook 5 to 6 minutes until it's longer pink, turning once halfway through cooking. Once it's done, remove it from the skillet and cover it to keep the chicken warm. Stir the maple syrup into hot skillet and cook for 2 minutes before stir in the green onions or parsley .Divide the chicken and potatoes among 4 plates then drizzle it with maple syrup mixture and prepare to devour it.
Ingredients: Mashed sweet potatoes (packaged or from scratch), 1 pound of chicken breast tenderloin, 2 tablespoons of Butter, Green Onions or fresh Parsley

Apple Squares
Apple picking is a well known and loved seasonal activity for Autumn so an apple recipe is a must. For Dessert try these yummy apple squares to put some of those apples you picked to use. First, preheat oven to 350 degrees then grease any pan you happen to have, preferably square. Then chop your apples and toss them with cinnamon and brown sugar in a bowl. After that combine together your flour, baking powder, and salt in one bowl and your sugar, vegetable oil, yogurt, and vanilla in another. Add your eggs to the sugar mix and whisk it. Once it's smooth add the dry ingredients into the wet ingredients and combine them. After you've done that, pour half of the batter into the greased pan, top with half of apples, then pour the remaining half of the batter on top of the apples layer. Put the remaining half of the apples on top. Bake for about an hour then dust with powdered sugar before serving.
Ingredients: 3 medium apples, peeled, cored, and chopped into small square chunks, 1 teaspoon of cinnamon, 4 tablespoons of brown sugar, 1 and 1/4 cup all purpose flour (sifted), 1 teaspoon of baking powder, 1/8 teaspoon of salt, 1 cup of white sugar, 1/3 cup of vegetable oil, 1/3 of cup Greek yogurt, 1 teaspoon of vanilla extract, 2 eggs
